Mì Quảng is a Quang Nam style noodle soup with pork and shrimp. It’s one of those regional specialties that I’m only just now getting to enjoy. This dish had a lot of great flavors going on, primarily from the tomato-tinged broth. Small dried shrimp gave a nice salty edge and the noodles were broad, fettucini-like, and cooked al dente. On the top were the prerequisite bánh đa (toasted rice cracker).
